Nasi Lamek

1 cup brown rice, soaked
4 tablespoons peanuts
2 tablespoons olive oil
2 inch lemon grass stalk, chopped
1 inch ginger, sliced
2 shallots, sliced
2 cups thin coconut milk
Salt to taste
1 medium cucumber, sliced 2 eggs, boiled and sliced

Heat the oil in a non stick wok and sauté the
peanuts till golden. Drain on absorbent paper

Place the rice in a clay pot; add the lemon
grass, ginger, shallots, coconut milk and half a cup of water. Add the salt
and cook over high heat till the mixture comes to a boil. Lower the heat,
cover and cook till the rice is tender.

Serve hot with fried peanuts, slices of cucumber
and boiled egg.

Tip:
A popular
breakfast dish in Malaysia, You can have it for break or for lunch. Brown
rice is better than the traditional polished rice as it retains the bran and
increase the vitamin B.
