Khees is usually prepared with corncobs plus a traditional delicacy in Malwa. It is a time intense preparation that needs constant watching as the cooking is in progress. A light quantity of ghee (butter) goes into it and one is left sated if a wee bit guilt-ridden after the material has been consumed. The milky sweetness of sweet corn linger long after the last spoonful has disappear and therefore the hint of the tempering and the tang of the squeeze juice still register their existence on the plate. This recipe is suitable for Tiffin use. To be truthful, this khees can’t be compare with real McCoy but it is an attractive variation on the cauliflower theme very helpful to break the monotony once the vegetable begins to jade. so try it and enjoy the khees

Gobhi Ka Khees


Gobhi Ka Khees

Cauliflower (medium sized)
 Dried ginger powder
Clove powder  
Black paper powder
Cardamom powder
Cinnamon powder
Mace powder
Green chilli (slit lengthwise and deseeded)
Lemon juice
Gobhi Ka Khees
1 head
1 tsp
½ tsp
½ tsp
½ tsp
¼ tsp
¼ tsp
1 tsp
2 tsp

Clean and grate the Cauliflower. Heat up ghee (butter) in a pan and put in the grated Cauliflower. Cook on high flame for about 1 minute put the salt along with powdered spices. Mix up to blend pours in the lemon juice. Adjust seasoning, garnish with green chilli and enjoy the hot khees
